July Fourth is one of my favorite holidays of the year! I love getting together with friends and family, enjoying the summer warmth, watching fireworks, and of course eating all the festive foods. I wanted to provide three of my favorite healthier recipes for the fourth that will be a huge hit at any gathering!
- Strawberry, Banana, Marshmallow Skewers:
On a wooden skewer, thread half a strawberry, banana slice, half a strawberry, and marshmallow. Repeat twice and end with another half strawberry. Drizzle chocolate syrup (I melted a few dark chocolate chips in the microwave and drizzled with a toothpick). Decorate with festive blue sprinkles!
- Blueberry, Raspberry Parfait:
In a small mason jar, layer strawberry greek yogurt (or your favorite flavor), blueberries, yogurt, raspberries, yogurt, and top with blueberries.
- Pineapple Refresher:
In a blender, combine 1/2 cup coconut milk, 1/4 cup coconut water, 1/2 banana, 1 cup fresh pineapple, 1 cup ice. Blend thoroughly, pour into a glass, and garnish with a strawberry! For an alcoholic version, add 1.5 ounces of your favorite vodka!
